HISPI Owner Cooks up a Storm at Aspire Restaurant

Award winning chef, Gary Usher, served up a storm at Trafford College’s Aspire Restaurant recently, sharing his expertise with the industry’s next generation of young chefs.

Owner of the much anticipated HISPI restaurant in Didsbury, Gary visited the College to share some of his experiences of working within the industry whilst giving the excited students a first-hand account of what it takes to become a top Chef in today’s competitive world of catering.

 

 

Gary, who won the Menu of the Year Catey award in 2013, also offered to work alongside learners as the restaurant’s guest chef for the day, together producing a perfect five course taster menu for diners. The menu for the evening was:

 

Pickled Cucumber, Pink

Grape

Whole Roast Quail,

 

Hazelnut & Truffle legs,

Walnut Mayo, Brown

Butter Salsify

 

Olive Oil Poached Stone

Bass, Heritage Beetroot,

Taramasalata, Sea Aster

 

Whipped Fromage Blanc,

Port Infused Pear,

Meringue

 

Chocolate Tart

 

Situated on School Lane in Didsbury, Hispi follows in the footsteps of the renowned Sticky Walnut in Chester, named the AA Guide’s 2014 Restaurant of the Year. Joining Gary for the venture is a first-class team, including head chef Richard Sharples, who boasts previous experience at venues such as the Prestwich institution, Aumbry, under Mary-Ellen McTague.
